The “Sole e Mare” experience at Fontana transports guests to the sun-kissed shores of Italy’s Amalfi Coast, where time-honored recipes, bold innovation, and heartfelt passion converge in one exceptional dining destination. Against the breathtaking backdrop of the Performance Lake at Wynn Palace, Fontana offers a taste of southern Italy’s vibrant flavors. Every detail – from the lemon-infused décor to the lively, interactive dining experiences – evokes the warmth and charm of coastal Italy. These colorful Italian dining experiences are designed to showcase the diversity of the cuisines on offer at Wynn and enhance Macao’s role as a “Creative City of Gastronomy”.

Chef Marco inherited his passion for heartfelt Italian cooking from a childhood with his grandmother in Naples. Throughout his culinary career, Chef Marco has worked with world-renowned chefs among the likes of Guy Savoy, Hélène Darroze, and Davide Palluda who have all attained Michelin stars. These culinary greats mentored Chef Marco and instilled in him the importance of fresh ingredients and the simplicity of preparation. In 2016, while Chef Marco was working for Accursio Ristorante in Sicily, the restaurant attained its first Michelin star. He then decided to take on a new challenge and ventured to Asia and the Middle East, working in Bangkok, Macao, the Emirates, Jakarta and most recently Bali.

With the arrival of “Sole e Mare”, guests are invited onto the shores of southern Italy to dine amid the refreshing tones of sunlit lemon trees. From the vibrant yellow accents of the interior décor to the dynamic, live culinary performances, every meticulously crafted detail takes diners on a culinary journey to the Amalfi Coast. Guests will also have an opportunity to meet and interact with Chef Marco himself. He looks forward to sharing the stories behind his family’s traditional recipes and showcasing the very best of Southern Italian culinary culture.

Chef Marco infuses each dish with his philosophy of “market-fresh ingredients, authentic flavors, and the warm conviviality of an Italian family meal”. His thoughtfully designed “Sole e Mare” menu features a variety of southern Italian delicacies which embody the classic flavors and colorful stories of dishes passed down through his family for hundreds of years. Diners may begin their culinary journey at Fontana with appetizers like Crudo di Ricciola, the hand-sliced Amberjack, bursting with southern Italy's sun-ripened tangy citrus flavors. Next on the menu is the Cartoccio di Spigola Alla Siciliana. Cartoccio is an ancient cooking method which involves steaming and baking the fish in paper. For this dish, the seabass is steamed and baked in paper with olives, capers, clams and white wine sauce. The “big reveal” of this truly Sicilian dish will be made at the table, when the Cartoccio is unraveled in front of guests for a surprising sensory experience.  The menu will also feature two of Chef Marco’s popular meat dishes. The first is his Cotoletta Alla Bolognese — generous portions of fried veal with ham and cheese served with fresh salad topped with Amalfi lemon dressing — which is designed for families and friends to share together. The second is his homemade Ravioli di Coda Alla Vaccinara which is filled with oxtail ragu, pecorino cheese and sautéed spinach. Oxtail vaccinara, once a staple meal for butchers in Rome – Chef Marco has refined this rich and flavorful dish using the stewed oxtail as ravioli, while respecting the original flavors that make this recipe a classic of Roman cuisine.
