Peppercorn Flavored Duck Foie Gras and Mushrooms Royale is a very special creation and a Chef André classic. Using French cooking techniques to prepare the Foie gras jelly, he takes the foie gras and blends it with eggs and a touch of cream. He then steams them at a low temperature and the surface of the foie gras is slightly grilled. Next, he adds the rare Sarcodon Aspratus mushrooms from Yunnan. This special creation from Chef André is exclusive to Sichuan Moon.
